Chilled Strawberry Soup
   
Yield ~ 8 - 5 oz. servings

3 cups Strawberries ~ ripe, hulled and halved 750 mL
¾ cup Orange Juice 180 mL
1 tsp. Lime Juice 5 mL
2 Tbsp. Honey 30 mL
½ cup Light Plain Yogurt 1% 125 mL
¼ cup. Light Sour Cream 1% 60 mL

½ cup Diet Ginger Ale 125 mL
3 branches Mint ~ coarsely chopped 3 branches


Here’s How!

Blend strawberries with orange juice, lime juice and honey in a food processor.

Mix yogurt and sour cream, add pureed strawberry mixture combining well.

Stir in ginger ale and mint, serve chilled with slices of floating strawberries
