Cran-Apple Crumble

4 med. Yellow Delicious Apples ~ peeled, cored and diced 4 med.
2 med. Green Apples ~ peeled, cored and diced 2 med.
2 cups Cranberries 500 mL.
½ cup Maple Syrup 125 mL.
4 Tbsp. Lemon Juice ~ fresh squeezed 60 mL.

1 cup Oatmeal 250 mL.
½ cup Brown Sugar 125 mL.
2 Tbsp. Flour 30 mL
2 tsp. Cinnamon 10 mL.
2 Tbsp. Margarine 30 mL.

Here’s How!

In a medium bowl, combine the apples, cranberries, maple syrup and lemon juice and toss. In a small bowl, combine the oatmeal, brown sugar, flour and cinnamon. Add the margarine and mix until the consistency resembles coarse crumbs.

Spoon the apple cranberry mixture into 8 individual ramekin dishes or into a large baking dish and spoon the oatmeal mixture over the top evenly.

Bake at 400ºF for 35 minutes or until the fruit bubbles through and the top is golden brown. Serve warm.


Chef’s Tip

Frozen vanilla yogurt makes a nice accompaniment to this dish - just 1 small scoop on top adds contrasting temperatures and texture.
